Foodie Friday - What I Ate In March

Hideous weather means one thing for me and one thing only - comfort food. Looking back at the pictures that I'd taken for this post I'm actually surprised I lost any weight at all this month, it all seems to be about warmth and carbs. Starting with carbs and fats was my gorgeous Roasted Vegetable and Feta Cheese Quiche - yummy  (you can find the recipe here :)


It isn't a carb fest without pasta and boy have I ate a lot of gluten free pasta this month - starting with some yummy pesto pasta with sweetcorrn, feta, red onion, and basil.



Next up some Quorn meatballs in a chilli tomato sauce, with gluten free pasta and grated cheese,


and my mums Mothers Day meal - a gluten free mushroom, and basil lasagna 


This is one of my favourite special occasion meals, it's a bit faffy but its amazing and tastes even better a day or so later.



Speaking of Mothers Day I also made a pretty epic gluten free Red Velvet Cake, with cream cheese frosting.


It was soooooo good - even if it did leave the kitchen looking like a crime scene x


Me and Mummy Lou also demonstrated this month that pancakes aren't just for Shrove Tuesday.


I made a lovely batch of gluten free pancakes, which she stuffed with a mushrooms, onions and cheese sauce , sprinkled with grated cheese and popped under the grill - quick, easy and really filling :)



Nothing screams comfort food more than soup and I've made a couple this month including my Carrot and Coriander Soup.

I also made the Roasted Tomato and Red Pepper soup that I first made for your last month (my recipe is here). This recipe has quickly became a firm favourite in my house, and it's a great way or of using peppers or tomatoes that have gone a bit soft. I've served it here with a chunk of crusty gluten free ciabatta with a scraping of butter on floating on the top x


Finally something I've eaten today seeing as it's Good Friday - a gorgeous gluten free Hot Cross Bun - yummy. I was good and just bought one packet from Tesco but I really do love them with a bit of butter -yum :)


I am expecting that April is going to start with a glut chocolate thanks to the Easter Eggs in my eye line, but I'm definitely going to try eat a bit more salad, I just hope the weather helps my diet out a bit.   1. OMG all that food looks amazing. I love pancakes more than any other dessert esp with chocolate sauce!
    I have never tried Feta cheese but that sounds so yummy...I do love food!!! ha hax
