Foodie Friday - Gluten Free Cheese Scones

There is nothing more traditional in summer than having a scone for afternoon tea. I love a good cream tea I think it must be my Cornish heritage kicking in but I also love savoury scones. Mmmm cheese scones, I could write poems, well I couldn't but you know what I mean. From the earliest kids birthday parties to the office tea trolley - I love them. It's nearly impossible to find ready made ones that are gluten free so I make my own. This is the recipe that I use xx

Gluten Free Cheese Scones

6oz Gluten Free Self Raising Flour
1tsp Xanthan Gum
1/2 tsp Salt
A Shake Of Pepper
2oz Butter (Or Margarine)
3oz Grated Cheese
1 Egg
2 tbsp Milk
1/2 tsp Mustard (optional)


1. Put your fat and flour and the Xanthan Gum into a large mixing bowl, and rub together 


2. Stir in 2/3 of the cheese, add salt and pepper


3. In a separate bowl beat together the egg and milk, and the mustard if using 


4. Add to the flour mix 


and mix till you get a soft dough. You might need a little bit extra milk as gluten free flour absorbs liquid differently to normal flour


5. Then roll out your dough to about 1 - 1.5 cm thick. 


Gluten free pastry, and dough is nigh on impossible to roll out, it sticks and drops to pieces, so I usually pop it on to a plate or silicone mat and push it out with the heel of my hand - not as precise but it works


7. Then cut out your scones, traditionally cheese scones were triangular, but you can do what ever shape you  like I'm using a small crimped square cutter, to make canape sized ones :)



8. Pop your scones onto a greased baking tray, brush with egg or milk, and sprinkle with the remaining cheese


9. Bake in a hot oven at about 220° for 10-15 minutes depending on the size - little ones will obviously take less time


10. When the scones have risen slightly and are golden brown their done. They should also sound hollow when you tap the base.



Allow to cool and serve with butter or cheese spread nom!



Like a lot of gluten free baked items they don't last very long before drying out, but you can refresh them with a quick blast in the microwave, or you can toast them x

You can make these with whatever cheese you like, cheddar gives a great flavour, but red Leicester gives a great colour. You could also use blue cheese or you can also add sun dried tomatoes, olives or whatever else you fancy to create a very swish, fancy scone.

Of course this recipe can be easily adapted for those lucky people amongst you who can eat gluten, just use regular self-raising flour and leave out the Xanthan Gum.
